Thanks for reading and I had the same revelation when I looked at the nutrition panel and saw there was still sugar in it, I hadn't thought about it too much and was just honed in on it being "lactose-free". Totally makes sense that part wasn't the "ultra-filtered" portion of their products, though for some reason I figured they used some membrane to filter that as well.
I've been trying to find a middle road in this world of nutrition polarization. With many exceptions, I see "processed" as a neutral and, frankly, overly generalized term. "Ultra-processed" is like throwing gasoline on this.
